- Basic: Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed reach in cooler gaskets soiled with black/green mold like substance.
- Basic: Establishment is conducting non-continuous cooking of raw animal foods and the written procedures are not available upon request. Observed wings cooked for approximately 5 mins not reaching 165F and placed in reach in cooler to cool. Wings are cooked again to 175++ per person in charge and immediately served. Provided non continues paper work to operator to fill. **Corrective Action Taken**

- Basic: Cove molding at floor/wall juncture broken/missing. Cove molding is broken behind hot water heater.
- Basic: Ice buildup in reach-in freezer and/or walk-in freezer. Fry freezer has ice buildup in it.
- Basic: Plumbing system in disrepair. Handle is missing on hot water at hand washing sink. You can still turn water on but the handle is a screw.
- Basic: Wood food-contact surface not properly sealed. Raw wood behind spikes for hose in kitchen. Must be smooth and easily cleanable.
